Bourbon Chicken

This is SO good! Serve over rice and with ginger glazed carrots.



2lbs boneless chicken breasts, cut in bite-size pieces

2 TBS olive olive

1 garlic clove, crushed

1/4 tsp ginger

3/4 tsp crushed red pepper flakes

1/4 cup apple juice

1/3 cup brown sugar

2 TBS ketchup

1 TBS cider vinegar

1/2 cup water

1/3 cup soy sauce



Mix together all of the ingredients below olive oil. Pour into large ziploc bag and add in raw chicken. Allow to marinade at least 30 minutes, but all day is better.



Heat oil in large skillet over medium heat. Add chicken and cook over medium heat until done. Turn down heat to low and allow sauce to simmer and thicken, approximately 10-20 minutes.

  1. Oh My Goodness! We just had this for dinner and it was SO GOOD! Teen "wasn't hungry" and was only sitting at the table to be polite. She had a small bite of the chicken with the sauce over rice and was hooked! Needless to say she had several bites!
