This is SO good! Serve over rice and with ginger glazed carrots.
2lbs boneless chicken breasts, cut in bite-size pieces
2 TBS olive olive
1 garlic clove, crushed
1/4 tsp ginger
3/4 tsp crushed red pepper flakes
1/4 cup apple juice
1/3 cup brown sugar
2 TBS ketchup
1 TBS cider vinegar
1/2 cup water
1/3 cup soy sauce
Mix together all of the ingredients below olive oil. Pour into large ziploc bag and add in raw chicken. Allow to marinade at least 30 minutes, but all day is better.
Heat oil in large skillet over medium heat. Add chicken and cook over medium heat until done. Turn down heat to low and allow sauce to simmer and thicken, approximately 10-20 minutes.
